Replacing the stamp card means first choosing between two things: keeping the stamp (one visit, one stamp) or moving to points (the amount paid sets the number of points). To move to points, with a network: Badger

What does not change, whatever the tool
Honour paper cards in progress for a month. Give the team one sentence, not a training session. Put the install QR code on a small stand at the counter, not on a poster. And measure: who comes back, how often, and what a regular spends compared with a passer-by. A tool that does not tell you that has only replaced the cardboard.
